Summer in Scottsdale has its own dinner logic. When it is 110 degrees outside, guests are not looking for anything fussy or heavy. They want a cold drink, a beautiful room, and food that feels generous without knocking them out for the night.

Elvira’s at DC Ranch is leaning into that rhythm with a limited-time summer menu, available now through the end of August, featuring seasonal appetizers, entrées, dessert, margaritas, happy hour specials and a three-course prix fixe option for $50 per person, plus tax and gratuity.

The menu brings the restaurant’s modern Mexican point of view into a format made for warm desert nights. Seafood, citrus, fresh vegetables, grilled seasonal ingredients, pickled accents and layered sauces give the menu its summer shape. Guests can choose one appetizer, one entrée, and one dessert from the seasonal menu.

“We kept asking ourselves what we’d actually want to eat when it’s this hot out,” says Executive Chef Christopher George. “For us, that meant dishes that are cool, fresh and full of flavor, but not heavy. You still get the flavors of Mexico, just in a way that feels a little lighter for summer.”

The meal can start with Hamachi Aguachile, made with cucumber, charred serrano-lime broth, avocado, watermelon radish, and cilantro oil, or Grilled Mexican Street Corn with roasted poblano cream, cotija, chile oil, and lime zest. Pork Belly adds a richer note, balanced with black bean purée, pickled onion and avocado mousse.

For entrées, the Chile-Lime Snapper is one of the menu’s seasonal standouts, pairing risotto, heirloom tomato salsa, charred broccolini and saffron-lime beurre blanc. Other options include Coffee-Ancho Short Rib with sweet corn purée, roasted baby carrots, crispy onions and ancho demi, as well as Pollo en Mole with jasmine-cilantro rice, grilled summer squash and toasted pepitas.

Across the menu, Elvira’s keeps the summer lens clear: bold flavor, lighter construction and ingredients that make sense when the desert is at full blast. Fish, lime, grilled vegetables, pickled onions and bright sauces bring freshness to the plate, while richer elements, like pork belly, roasted poblano cream and mole, are balanced with acidity, texture and seasonal produce.

That same approach carries into the bar program. The Euphoria margarita, made with hibiscus, caramelized pineapple, lemon, and agave, brings a colorful, tropical note to the table without losing the crispness guests want in a summer cocktail. Elvira’s also offers daily happy hour from 4 to 6 p.m., featuring $9 glasses of wine, nearly half-off cocktails, and happy hour-only food specials such as tacos, shrimp skewers, and ahi tartare.

“A good summer cocktail should feel refreshing right away,” George says. “The Euphoria has that bright, tropical feel from the hibiscus and pineapple, with enough citrus to keep it really crisp.”
