Summer dining in Scottsdale has its own set of rules. The food should feel bright, the drinks should be cold, and the meal should be interesting enough to get people out of the house without feeling too heavy once they arrive.
Tomu-San Sushi at DC Ranch is meeting that moment with a limited-time summer menu, available now through the end of August, served alongside its regular dinner menu. The seasonal offering brings together chilled seafood, yuzu, cucumber, Thai basil, pickled vegetables, roasted summer squash, lemongrass, coconut-lime broth, and mango in a lineup built for warm desert nights.
The restaurant is also offering a 3 for $30 summer promotion featuring three sake pours, three pieces of nigiri and three pieces of sashimi, as well as a 2 for $20 option without sake. Together, the menu and seasonal specials give guests a flexible way to experience Tomu-San, whether they are stopping in for happy hour, planning a date night or ordering several dishes to share across the table.
“We wanted the summer menu to feel fresh and easy to enjoy, but still really satisfying,” says Executive Chef Christopher George. “When it’s this hot out, people want brightness, texture, and flavor. They want something that feels special, but not something that weighs them down.”
The summer menu opens with Hamachi Crudo, served with yuzu kosho vinaigrette, watermelon, cucumber, Thai basil, sesame, and crispy shallot. Shishito & Baby Corn Tempura brings crunch and smoke with smoked togarashi aioli, bonito, and lime. Pork Belly Lettuce Wraps add a richer bite, balanced with miso-hoisin glaze, pickled daikon, herbs, and peanut.
Entrées include Miso-Glazed Black Cod with ginger-happy rice, baby bok choy, and coconut-lime broth; Korean Marinated Short Rib with gochujang potato purée, roasted summer squash and kimchi jus; and Lemongrass Chicken with coconut sticky black rice, grilled baby carrots, and green curry beurre blanc. For dessert, Mango Panna Cotta offers a cool finish with fresh mango, lime syrup, and toasted coconut.

Beyond the limited-time menu, Tomu San is also leaning into the kind of ordering that works especially well in summer: smaller plates, cold drinks, sushi rolls, and dishes meant to move around the table. Guests can build a meal around Szechuan BBQ Ribs, Crispy Wagyu Beef Gyoza, lettuce cups or rolls such as the Lollipop Roll, a cucumber-wrapped option with a lighter feel; the Aloha Roll, which brings a refreshing kick; and the Firecracker Roll, a guest favorite.
“A lot of the Tomu-San experience is about sharing,” George says. “You can come in for a sake flight and a few pieces of fish, or you can make it a full dinner with rolls, small plates, and entrées for the table. That is what makes it fun. It does not have to be one kind of night.”
The bar program adds another layer to the summer experience. The 3 for $30 promotion gives guests a guided way to pair sake with nigiri and sashimi. Or refreshing specialty cocktails include the Basil Babe, made with Japanese gin, grapefruit, lime, agave, and fresh basil, and the Saketini, made with Tito’s, sake, lychee, and lime. Zero-proof options include the Lychee-Tea, made with green tea, lychee purée, lemon and agave, and the Yuzu Margarita mocktail, made with lime, yuzu, agave, and club soda.
