Scottsdale’s dining scene just got a glamorous new pulse. JING Scottsdale has officially opened at Scottsdale Road and Shea Boulevard following a dramatic $11 million transformation, bringing the brand’s signature blend of global cuisine, sleek design, and high-energy nightlife to the Valley.
If the name rings a bell, that’s because JING already draws crowds in Aspen, Denver, and Las Vegas. Now Scottsdale gets its own 10,000-square-foot playground where sushi, prime steaks, and premium seafood share the spotlight with cocktails, DJs, and a dining room that evolves as the night unfolds.
At the center of the kitchen is Corporate Executive Chef Thomas Griese, whose resume reads like a greatest hits of luxury kitchens. Griese trained under culinary heavyweights Thomas Keller, André Rochat, and Michael Mina, and now leads the menu with a polished but playful approach that blends global inspiration with subtle Asian influence.
The menu moves easily from delicate to decadent. Guests can start with sushi rolls, nigiri, sashimi, dumplings, and raw bar selections before leaning into richer plates like Wagyu hot rock, noodles, and chilled seafood towers. Signature dishes include the Famous Peking Duck served with delicate flour wraps and hoisin, the wildly popular Tuna Pizza topped with ponzu aïoli and truffle oil, and an Alaskan Snow Crab roll finished with warm ponzu butter.

Behind the bar, the cocktail program leans just as bold. Standouts include the Drunken Buddha, a bright citrusy mix of vodka, limoncello, and pineapple finished with a tingling buddha button garnish, along with the smoky Not White Duck and the tropical Purple Facts crowned with coconut foam.
The design carries JING’s signature philosophy of energy and balance into every corner of the space. Rich green tones, gold accents, waterfall chandeliers, and sculptural columns set a dramatic stage, while a mid-height wraparound bar and plush booths create plenty of places to settle in and stay awhile.
As the evening unfolds, the room begins to shift with it. Lighting softens, chandeliers glow in new colorways, and DJs gradually layer in a soundtrack that lifts the energy from polished dinner service into a sophisticated late-night lounge.
The rhythm of the night starts early with one of the Valley’s more generous happy hours from 3 to 6 p.m., where sushi rolls, shareable plates, and cocktails ease guests into the evening. By dinner, the dining room hums with activity. Later, the music rises, the lights dim a touch, and the space settles into its after-dark groove.
And because this is Scottsdale, the experience doesn’t stop at the doors. Expansive patios lined with lounge seating, dining tables, and a sleek fire pit invite guests to linger outdoors under the desert sky.
